Challenges
We hypothesise that a healthy dietary pattern may dampen excessive oxidative stress and inflammation, and thereby reduce the risk of diseases. Our major aim is therefore to identify foods and drinks, and food and drink with ability to reduce oxidative stress and dampen inflammation.
The focus of our mechanistic approach revolves around compounds that modulate the transcription factor NF-kB and the Keap1/Nrf2/ARE pathway. NF-kB has a key role in many processes such as inflammation, immune responses, cell proliferation and apoptosis, and it is clear that aberrant regulation of NF-kB is involved in many chronic inflammatory diseases. The Keap1/Nrf2/ARE pathway controls expression of a number of cytoprotective proteins.
